Fresh-off-the-Tree Grilled Peach Salad by Bobbie Burgers
Estimate a good-sized peach and a handful of arugula per person.
Fresh peaches, halved and pitted
Good-quality olive oil, for cooking
½ cup good-quality olive oil
½ cup white wine vinegar
1 tsp Dijon mustard
Salt and freshly ground black pepper, to taste
Preheat your grill to medium-high. Brush peach halves with olive oil, place cut side down on the grill and let them get nicely charred. Flip and do the same on the other side. Set aside to cool, then roughly chop.
Lay a few handfuls of arugula on individual plates or a large platter. To make vinaigrette, whisk or shake together oil, vinegar, mustard, salt and pepper until well combined. Top arugula with peaches, drizzle with dressing and top with crumbled feta.
