Molasses ginger cookies are a holiday classic, and are better than any potpourri for making your house smell wonderful.

Chewy Ginger Molasses Crinkles Recipe

 

Ingredients

1/2 cup butter

1 cup sugar

1/2 cup brown sugar

1 large egg

1/4 cup molasses

2 cups all-purpose flour

2 tsp baking soda

2 tsp cinnamon

1 tsp ginger

1/4 tsp salt

Sugar, for rolling

Directions

Preheat the oven to 350°F. In a large bowl, beat together butter and sugars until pale and light. Beat in egg and molasses.

In a smaller bowl, stir together flour, baking soda, cinnamon, ginger and salt. Add to molasses mixture and stir until dough comes together.

Roll dough into 1-inch balls and roll in a shallow dish of sugar to coat. Place an inch or two apart on a parchment-lined sheet and bake for 12 minutes, or until

cracked and golden around the edges. Transfer to a wire rack to let cool.

Makes 2 1/2 dozen cookies.

The Variations

Chocolate Molasses CrinklesReplace ½ cup of the flour with cocoa. Shape, roll and bake as directed.

Double Ginger Molasses CrinklesAdd ⅓ cup chopped crystallized ginger to the dough. Shape, roll and bake as directed.

Ginger Cream Cheese SandwichesSpread the bottoms of half the baked cookies thickly with some cream cheese frosting; sandwich with a second cookie.
